Olive oil of superior category obtained directly from olives and only by mechanical procedures.
This oil is of the Castellana variety, which can considered a local variety and one of the 24 main varieties in the Peninsula. This genetic factor joins other factors of agronomic type- environmental (soil and climate) of product handling in its extraction and conservation, to produce a natural juice, such as extra virgin olive oil, that, once all the physical-chemical quality attributes have been assumed (degree of acidity, etc.) and the organoleptic or tasting, difference and distinguishes something that is taste itself. We can say that we have a unique product because it is unique, the exclusive variety of this area that produces.
