Extra virgin olive oil obtained from the fruit of the olive tree, of the local variety CASTELLANA (VERDEJA), by mechanical procedures or by other physical means that do not produce alteration of the oil, preserving the flavor, aroma and characteristics of the fruit from which it comes.
The predominant color is green lemon , more or less intense, depending on the time of harvest and the degree of ripeness of the olive.
From the organoleptic point of view, the oils of this variety are very fruity and aromatic , resounding in their smell of leaf, in which flavors of grass, hazelnut or banana are intermingled , sometimes with spicy taste in the mouth.
In order to maintain the typical characteristics of the product in all phases, the packaging process is carried out within the recognized geographical description. In this way, you can have full control of the production, by the Control Organisms , and therefore the final handling of this product is in the hands of the producers in the area. It is these who know best the behavior of these oils to the handling of packaging, such as time and decanting modes, filter handling, diatomaceous earth, cellulose, packaging temperatures, cold behavior and storage. All this, with the aim of maintaining the typical characteristics of the product, guaranteeing the traceability of the oils.
The packer must have systems that allow the independent packaging of the oils of the Designation of Origin with respect to other oils that could be packaged.
Likewise, we have approved oil measurement systems.
The packaging must be made in glass, metallic coated, PET or vitrified ceramic containers.
The labeling of the oil will include, next to the sales denomination, the mention "Denomination of Origin (or DO) Aceite de La Alcarria" and, optionally, the mark of conformity of the product certification entity belonging to the control structure.
The containers in which the protected oil is issued for consumption shall be provided with a guarantee seal, numbered labels or back labels provided and controlled by the Control Body, so that a new use is not possible.
The labeling will be adapted to the general labeling standard.
